Hi Byron,
I am sure you could find a number of resources for this. In recent years, we have used the NCDAE Cheatsheets, http://ncdae.org/resources/cheatsheets/. They are not updated for Word 2016, but should point you in the right direction.

Subject: [Athen] Accessible document cheat sheet
Hi all,
Does anyone have a short 1-2 page document you would be willing to share on how to create accessible documents in Word with appropriate headings, styles, etc?
Thanks,
Bryon
