Hi Debee,
Equatio from Texthelp may be an option - it has multiple ways to enter
information including speaking (including AAC), typing with prediction, as
well as handwriting which isn't useful here but good to know. It's user
friendly, can interface with Word, Google Docs or course management
software, and is designed for Chemistry and other symbolic text as well as
Math.

I'd also recommend connecting with the DO-IT Center at the University of
Washington, which offers lots of expertise and connections for students
with all kinds of disabilities in STEM learning.
