One option is to use a graphics tablet with Mac: One explanation and set of
instructions

Two options I've used on the ipad that worked well two years ago, and even
better now:
OneNote

which
also has a audio-sync feature. I've worked with students who uploaded
powerpoint slides, took notes by hand, and audio-synced to have everything
in one place.

I have also used NotesPlus

automatic for handwriting recognition and seems to get better every year.
